Anyone who knows me well knows that I'm not exactly the greatest cook around. I get by, and the stuff I can cook is good. But I'm constantly wanting to improve. I had an idea. How bout making a blog with different people's favorite meal recipes. So now I need recipes. Just simple meals that aren't expensive or complex to make, and that don't contain obscure ingredients that couldn't be purchased from your regular grocery store in any country.

Macaroni Cheese

From Suzanne

2 tablespoons butter
1 small onion, finely chopped
2 tablespoons flour
1/2 teaspoon dry mustard powder
2 cups milk
salt
pepper
2 cups grated cheese
2 cups macaroni, cooked

Melt the butter in a saucepan. Add onion and cook until clear. Stir in flour and cook until frothy. Gradually add milk stirring constantly until sauce boils and thickens. Remove from heat. Season with salt and pepper to taste. Stir in half the cheese. Add the macaroni stirring to combine. Pour mixture into an oven proof dish. Sprinkle over remaining cheese and bread crumbs if wanted. Cook at 190 degrees C for 20 minutes or until golden and heated though. Chooped cooked bacon or ham can be added to the sauce if desired.

Roasted Garlic

Get the whole bulb, cut the top part off to expose all the little cloves, then drizzle with oil and a pinch of salt, wrap in foil and bake for about 30 mins to an hour at 130-150 C.

Corn Chip Casserole

Brown minced beef. Mix Diced Tomatoes, Small Tub of Sour Cream, One small can of Cream of Mushroom soup, Taco Seasoning, and salt and pepper. Then mix together with the beef. Then layer a casserole dish with the meat, grated cheese, and dorritos/corn chips, then repeat it one more time. Put it in the oven, and cook it until it's golden brown and the cheese is bubbling.

Golden Dream Cocktail

1 shot COINTREAU
1 shot GALLIANO
2 shots Orange Juice
1 shot Cream

Shake all ingredients with ice and fine strain into glass.
Glass Type: Martini / Cocktail

Beef Stew

Cube some stewing beef, add it bit by bit to a pot with a little oil, cook till browned. Add an onion, half a teaspoon of curry powder and enough water to cover everything. Bring to the boil then lower the tempreture and simmer for 2 hours. Add vegetables half way though. Thicken with cornflower or bristo gravy mix. Serve with mashed potatoes.

Jambalaya

From Greg. This is his Mum's recipe!

6 cups water 3 cups rice depending on how much you want to make you can add
more water and rice or less.Half as much rice as water.
1 bell pepper of each colour (green, red, yellow, orange) -(yellow and
orange optional)
2 lg onions diced
6 stalks celery diced
1 tsp salt (or to taste)
1/2 tsp pepper (or to taste)
1/4 tsp red pepper flakes (or to taste)
6 cloves garlic minced
8 to 12 chicken thighs and/or drum sticks
1 keilbasa sausage chopped into bite size pieces (optional)

Directions:
saute vegetables first in butter (if you want them soft)
add to pot or large baking dish
add chicken, rice, seasonings and water or broth
place in pre heated 350F degree oven for 1 hour to 1 hour 15 minutes
covered in foil
remove foil carefully
Serves 8 to 12

The leftovers are even better! lol

Meatloaf

500g sausage meat
x6 biscuits of weetbix
x3 tablespoons of milk
x1 egg
x1 chopped onion
Handful of grated cheese (optional)


Preheat oven to 180o Celsius. Crush all weetbix biscuits into the large bowl. Place 2 tablespoons of milk and sausage meat into the bowl and mix. Add the 3rd tablespoon of milk, chopped onion and egg when the mix appears to dry. When fully mixed, empty the mix from the bowl into the baking dish. Put grated cheese on top if desired.

Place baking dish into preheated oven and bake for 30 minutes.

Scalloped Potatoes

Take 4 large potatoes, peel and thinly slice them and stack in a baking dish. Mix together 2 cups of cream and a packet of cheese and garlic Maggi Scalloped Potato mix. Pour over potatoes and cook at 180 to 200C for an hour and a half.

Mince, Potato and Silverbeet Pie

Wash the silverbeet. Trim the stems. Cook it in a large pot with about 2 cups of water. Keep pushing it down till its all tender. Let it cool down a little bit then squeeze the excess water out. Then chop it up into little pieces.

Fry the mince with a little onion, garlic and a stock cube. Add the silverbeet to the pan and let it warm though.

Lightly grease a casserole dish and add half the mix. Sprinkle a light layer of grated cheese then the rest of the mix, top with a layer of mashed potato. Sprinkle some more grated cheese on top and bake in the oven till the cheese browns.

Last night I was talking with my good friend LuNa who was explaining how to cook one of her family's favorite meals. I had an idea. How bout making a blog with different people's favorite meal recipes. I ran this idea past a male friend of mine this morning and he said it was a great idea and he'd try some of the recipes if they sounded easy enough.

So now I need recipes LOL. Just simple meals that aren't expensive or complex to make, and that don't contain obscure ingredients that couldn't be purchased from your regular grocery store in any country.
